Have a lot of Zucchini?

We sure do.  Despite our dismal cucumber, zucchini and summer squash crop which was plagued by powdery mildew, we still have a lot.  This time of year we have a lot of everything!  But we stumbled across this recipe online for lemon zucchini  bread.  We doubled it and used a whole zucchini up.

We made muffins instead of bread because they are easier to grab and go or freeze if we don’ t eat them all.  So if you have some extra zucchini, try this recipe – it’s worth turning on the oven in  late summer.
